We love April. All of the colors just seem brighter as we near Spring.
In our quest to find a totally unique spring martini, we were reminded of one of our early spring favorites: beets. Before you stick out your tongue at the mention of beets - give this a shot! Think of beet and blue cheese salad - it gets its greatness from the salty sweet mix of flavors. Just like in a dirty martini, where the cocktail gets a satisfying kick from the blue cheese olives and juice, this drink marries several flavors into something totally unique. We think you're going to love this!
This beet + ginger cocktail is gorgeous, delicious, and everything you want in a happy hour drink. The simple syrup uses less sugar than usual in order to cut the sweetness and adds a subtly sweet flavor to balance the salty olives. Bonus: your friends will be super impressed when you whip up a batch of these. They take no more than a few minutes to prepare, but the result is super elegant. Don’t believe us? What you'll need:
For the syrup:
2 beets beets, trimmed, peeled and chopped into 2” (-ish) pieces
2 large pieces of ginger, peeled and chopped into 1” pieces
4 cups water
For each martini:
½ cup granulated sugar or coconut sugar
1 oz. vodka
Blue cheese stuffed olives on bamboo skewers
In a medium pot, place the beets, ginger, sugar, and water over medium-high heat. Bring to a boil and then reduce the heat to simmer for 15 minutes. The longer you simmer it, the sweeter it will become.
Strain the beets and ginger from the liquid, remove from the heat and cool. (You can pour this into a glass container and store in the fridge for up to 2 weeks.)
In a glass of ice, add your vodka, 2 oz. of your beet + ginger simple syrup, and top with sparkling water.
